Matterhorn Macaroons Disneyland Recipe

The Matterhorn Bobsleds attraction at Disneyland is truly one of a kind. The exterior of the ride is a replica of the prestigious Matterhorn mountain in the Swiss Alps. The snowy northern side of the mountain is covered in over 800 gallons of white paint and topped with millions of tiny glass beads to make it sparkle in the California sunlight. 

The exciting bobsled tracks swoop and dive through shadowy caves and along rocky cliff edges. During the white knuckle race from the top of the mountain to the bottom, guests are taken across wooden bridges, under waterfall, and through magically glowing ice crystal caverns. The ride comes to a dramatic conclusion with a splash into a chilly alpine lake. But, the most exciting thing about the experience is encountering the famous Abominable Snowman! Watch out for his glowing red eyes - they tell you just how ready he is to protect his mountain. 

Disneyland added FastPass service to the ride earlier this year, making it even easier to enjoy the iconic ride. You can make your own Matterhorn Macaroons at home with this Disneyland copycat recipe. Disneyland's Matterhorn Macaroons are tall mountain shaped macaroons covered in white chocolate and sugar snow sprinkles. They are not overly sweet and light in texture. 

Disneyland Matterhorn Macaroon

For this Matterhorns Macaroons recipe, the peaks are mini versions of the ones from the park with a sprinkle of coconut flavor. They are fluffy and melt-in-your-mouth delicious while being a more appropriate size for little mountaineers and explorers.  

Matterhorn Macaroons Disneyland Recipe Finished

Copycat Coconut Matterhorn Macaroons Recipe:
1/4 C Sweetened Condensed Milk
2 Egg Whites
2 T Flour
2 T Sugar
2 T Butter
1 TSP Vanilla
Pinch of Salt
7 Oz. of Shredded Coconut

Start by combining the sweetened condensed milk, egg whites, flour, sugar, melted butter, vanilla and salt in a bowl.

A simple method for separating the egg whites from the yolks is to crack the egg in half. Shift the egg yolk back and forth between the two halves of the shell and let the whites drip into a bowl. When all of the whites have separated from the yolk, you can set the shell and yolk to the side.

Whisk the ingredients together in the bowl. Then place the entire 7 oz. bag of shredded coconut into the blender. Blend it on a low speed until the coconut is in small pieces. I like the texture of the copycat Matterhorn Macaroons much better when the coconut pieces are smaller.

Stir the coconut into the bowl. The batter should be about cookie dough consistency. Let it chill for about 30 minutes in the fridge. 

Matterhorn Macaroons Disneyland Recipe Batter

Set the oven to 350 degrees. Cover a cookie sheet with parchment paper. This step is pretty critical for the Matterhorn Macaroons recipe. The egg whites in the batter can turn into "glue" without the parchment paper lining. It is impossible to remove them from the pan without the paper.

Place the batter in mounds onto the pan. Mold them into mountain shapes.

Bake them in the oven for about 20 minutes. They will turn golden brown. 

Allow the copycat Matterhorn Macaroons to cool to room temperature. Now, it is time to cover them with delicious white chocolate snow. My favorite dipping chocolate is the Ghirardelli White Melting Wafers. They are made with real cocoa and not just the imitation stuff. It makes a big difference!

Melt about 1/2 cup of chocolate in a small bowl. When you use the microwave for melting, it is important to stop the time about every 20 to 30 seconds to stir the chips. Take it out of the microwave before the chips are completely melted. They will continue to melt as you stir. This prevents scorching. 

Chop another 1/2 cup of white chocolate chips into small bits.

Dip the top of the macaroon into the melted chocolate and then sprinkle on the chopped chocolate bits. This is the best kind of snow. My kids always try to eat the kind that is cold and falls from the sky, but I recommend this instead. It's much better!

Once all the Matterhorn Macaroons are covered in their tasty mountain snow, you can claim the peak for Disney with a Mickey flag. You can make your own with paper, toothpicks and a marker.

Then, go ahead and enjoy the taste of your conquered coconut mountains. They are really quite delicious. Just make sure to watch out for any Abominable Snowmans ready to steal your treat!
