Everyday Celebration Cupcakes With a Sprinkle of Disney Magic

My girls and I love to turn ordinary days into extraordinary ones. Who says you need a birthday or holiday to have a remarkable day? Everyday life should be fun and celebrated! And, what shouts happiness more than Disneyland and Cupcakes? Since we can’t pack up and fly to the Happiest Place on Earth every day, we decided to put on our favorite Disney music, strap on our Mickey Ears and bake the day away - just because.



Happiness (and glorious cupcake aroma) spread through our house as we sang along to our favorite Disney songs, baked and taste-tested. Our creations turned out beautiful and delicious, and fun memories were made!



We made 3 different kinds of cupcakes:

- Chocolate with Cream Cheese Frosting
- Vanilla with Chocolate Frosting
- Coconut with Whipped Cream Frosting

Here’s what you’ll need if you want to try our delicious recipes:



Chocolate with Cream Cheese Frosting

Chocolate cake mix & all ingredients listed on the box, PLUS ½ cup sour cream (add this to your cake mix to make your cupcakes moist and delicious!) Bake as directed.

Cream Cheese Frosting: Cream together until smooth the following ingredients: 1 stick of butter and 1 block of cream cheese. Then add: 1 tsp. vanilla extract and approximately 3 cups powdered sugar. (Add sugar a little at a time). If your frosting is too thick, you can add a bit of evaporated milk (1-2 tablespoons). Also, if you need to thicken or sweeten it up a bit, add more powdered sugar. Just add and taste, and add and taste! (This is my girls’ favorite part!)

 
When you have your frosting tasting perfectly, transfer it to a piping bag prepared with a wide frosting tip.  We used Wilson brand piping bags and large and jumbo tips, but if you don't have piping bags you can make your own using a parchment triangle taped closed, or even a zip-top baggie works as long as it's heavy-duty.  
 
Frosting your cupcakes is fun as you try to perfect your swirl!  We finished our chocolate ones off with some colorful flower sprinkles that matched our World of Color Mickey Ears.  



Vanilla with Chocolate Frosting

Vanilla cake mix & all ingredients listed on the box, PLUS one box of Hershey’s white chocolate instant pudding mix (add this to your cake mix to make your cupcakes moist and delicious!) Bake as directed.

Chocolate Frosting: Cream together 2 sticks of butter, 4 tablespoons cocoa powder, 3 cups powdered sugar, 1 teaspoon vanilla extract and 2-4 tablespoons evaporated milk. (These measurements are estimated. It is something you have to do by taste – a fun job! I like to add and mix, then add some more, and mix again. Make sure the butter is soft so it creams easily). 
 
Again, when your chocolate frosting is tasting and looking perfect, transfer it to your piping bags and frost your cupcakes.  We loved these soft pink pearls added to our vanilla-chocolate cupcakes for a special touch and magical feel fit for a Disney princess.    



Coconut with Whipped Cream Frosting

White cake mix & all ingredients listed on the box, PLUS one box of instant coconut pudding mix (add this to your cake mix to make your cupcakes moist and delicious!) I also like to add a drop or two of coconut extract to the batter. Bake as directed.

Whipped Cream Frosting: Add 1 pint of heavy cream to your mixer and start blending. Slowly add in 2 tablespoons of sugar. When the cream starts to thicken, add ½ teaspoon of vanilla extract and ½ teaspoon of coconut extract. Mix and then taste. You might want to add more sugar at this point. If it tastes to your liking, finish whipping until stiff. Don’t over mix, or you’ll turn it into sweet butter. 
 
Pipe the whipped cream onto your cupcakes just the same as you would frosting, using piping bags and a jumbo tip.  When ours were frosted, we added a touch of roasted coconut on top. Wouldn't these be a perfect combination with a Dole Pineapple Whip from Adventureland?



After the day of baking, we were able to share our yummy gourmet creations with lots of loved ones.  Sharing the happiness is what's its all about!
